A classic grilled steak recipe with tangy chimichurri sauce.
Ingredients
- 680g steak
- 1 tsp freshly ground black pepper, divided
- 1/2 tsp coarse salt
- 1 garlic clove
- 12g fresh parsley leaves
- 10g fresh coriander leaves
- 10g fresh mint leaves
- 2 tbsps olive oil
- 1 tbsp Dijon mustard
- 1 tbsp fresh lime juice
- 11/2 tsps capers, drained

Method
Step 1
Let the steak stand 30 minutes at room temperature. Sprinkle with 1/2 teaspoon pepper and salt.
Step 2
Preheat the grill to high heat.
Step 3
Place the garlic in food processor; process until fine. Add parsley, coriander, and mint; process until coarsely chopped. Add the oil, mustard, lime juice, capers and remaining 1/2 teaspoon pepper; process until finely chopped.
Step 4
Place the steak on the grill coated with cooking spray. Grill for 2 minutes; turn steak over. Grill for another 2 to 3 minutes or until desired degree of doneness. Let stand 5 minutes. Cut steak across grain into thin slices. Serve with the chimichurri sauce.
