Grilled Steak Salad

Ingredients

  • 500g rump steak
  • 3 tbsps soya sauce
  • 2 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 3 cloves garlic, finely chopped
  • 11⁄2 tsp smoked paprika
  • 1⁄2 tsp freshly ground black pepper
  • 1 cup baby spinach leaves
  • 2 carrots, finely sliced
  • 1⁄2 cup cherry tomatoes, halved
  • 2 radishes, finely sliced
  • 1 stick celery
  • 1⁄4 cup rocket
  • DRESSING
  • 1 tbsp plus 1 tsp red wine vinegar
  • 1 tsp paprika
  • Pinch of salt
  • 3 tbsp olive oil

Method

Step 1

In a large glass dish, whisk together the soy sauce, white wine vinegar, olive oil, garlic, paprika and pepper. Add the steak and turn to coat with the marinade. Cover and refrigerate for approxi- mately 2 hours.

Step 2

Heat the grill to medium-high heat. Lightly oil the grill. Remove the steak from the marinade and grill to desired degree of doneness, 3 to 4 minutes per side for medium-rare. Let the steak rest for 5 to 10 minutes. Cut in thin slices across the grain. For the dressing, whisk together the red wine vinegar, smoked paprika and salt. Slowly pour in olive oil, whisking constantly.

Step 3

Assemble the salad with the spinach, carrots, cherry tomatoes, radishes, celery and rocket. Top with the sliced steak and drizzle with the dressing.
