Ingredients
- 1 eggplant, cut into chunks
- 4 baby marrows, sliced
- 8 cherry tomatoes
- 1⁄4 tsp dried basil
- 1⁄4 tsp dried rosemary, crushed
- 1⁄4 tsp dried thyme
- 1/8 tsp garlic powder
- 1/8 tsp salt
- 1/8 tsp pepper
Method
Step 1
On 6 soaked wooden skewers, alternately thread the eggplant, baby marrow and cherry tomatoes.
Step 2
Lightly coat vegetables with olive oil. In a small bowl, combine the seasoning and sprinkle over vegetables.
Step 3
Grill vegetables, covered, over medium heat for 6-12 minutes or until vegetables are tender, turning frequently. Serve with basil pesto.
