Herbed Mashed Potato2017-04-28

- 900g potatoes, peeled and cut into 21⁄2cm pieces
- coarse salt
- 250ml cream
- 2 tbsps butter
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
Place the potatoes in a large pot, covered with water and add 1 teaspoon salt. Bring to a boil; reduce heat to medium-low, and simmer until potatoes are tender, 15 to 18 minutes. Drain and return potatoes to pot.
Stir potatoes over medium heat until dry, about 1 minute. Remove from heat.
In a small saucepan, combine the cream and butter; bring to a simmer over medium heat. Pour half of the hot liquid over the potatoes. Mash until smooth, adding more liquid to reach desired consistency. Stir in the parsley and chives; season with salt. Garnish with more herbs.
