- 1/4 cup(s) light golden syrup
- 1/2 cup(s) vegetable shortening (try par-fex)
- 1/4 teaspoon(s) salt
- 1/2 teaspoon(s) vanilla extract
- 1 1/2 teaspoon(s) cornflour
- 480 grams icing sugar
Mix golden syrup, vegetable shortening, and salt in a large bowl. Beat in vanilla extract and cornflour.
Slowly stir in icing sugar, about 1 cup at a time, mixing in the sugar thoroughly each time before adding the next cup. Fondant will become increasingly stiff; if too sticky, add more cornflour and icing sugar to make an easily-workable dough.
Turn fondant onto a work surface generously dusted with cornflour; roll to desired thickness or work into desired shape.
