Hot Dogs with Red Onion Marmalade

This recipe is ideal as a lunch idea on a camping trip. Make the onion marmalade at home and pack in a jar.
Ingredients
- 8 hot dog sausages
- 8 hot dog rolls
- 1 tbsp mustard seed
- 125ml apple cider vinegar
- 6 red onions, sliced
- 100g brown sugar
- 50g golden syrup
Method
Step 1
Toast the mustard seeds in a dry pot over medium heat until seeds are slightly browned.
Step 2
Add the vinegar, onions, brown sugar and golden syrup to the pot containing the mustard seeds. Cover, but stir occasionally to prevent burning. Cook for about 20 minutes at medium-high heat.
Step 3
Remove the pot cover and reduce to medium heat. Cook until liquid is reduced and onions are dark in colour, about 20 minutes. Place in a sterilized jam jar, ready to pack for a trip.
Step 4
To make the hot dogs, oil the grill over a campfire and heat to medium heat. Grill the hot dog sausages for 5 minutes each side, or until sausage is heated through.
Step 5
Cut the rolls in half and toast over the fire. Place the sausages in the rolls and evenly cover with marmalade. Serve with mustard and tomato sauce.
