Ingredients
- 200g chickpeas, drained and rinsed
- 2 tbsps lemon juice or more
- 2 garlic cloves, finely chopped
- 1 tsp ground cumin
- pinch salt
- 1 tbsp tahini
- 4 tbsps water
- 2 tbsps olive oil
- 1 tsp paprika
- 1 sprig rosemary
Method
Step 1
Combine the chickpeas, lemon juice, garlic, cumin, salt, tahini, and water in a food processor, and blend to a creamy purée. Add more lemon juice, garlic, cumin or salt to taste. Add to a serving bowl.
Step 2
Drizzle with extra virgin olive oil and scatter with the reserved chickpeas. Garnish with whole chickpeas, paprika and a sprig of rosemary.
