Italian Roast Chicken

  • 4 chicken portions
  • 2 tbsp of olive oil
  • 1 tbsp chopped garlic
  • 200g cherry tomatoes
  • 60ml chicken stock
  • bunch rosemary, chopped
  • salt and freshly ground black pepper, to taste


Step 1

Preheat the oven to 190°C. Season 4 chicken portions with salt and pepper. In a large pan, heat 1 tbsp of olive oil over medium high heat. Brown the chicken, skin-side-down only. Set aside.

Step 2

In a baking dish, toss the 1 tbsp chopped garlic and 200g cherry tomatoes with 1 tbsp olive oil and 60ml chicken stock and season with a little salt and lots of freshly ground black pepper. Place the browned chicken on top, skin side up. Sprinkle over some freshly chopped rosemary. Roast for 45 minutes, uncovered, or until chicken is cooked through.
