Lemon and Garlic Hummus2014-09-22

A light, fresh hummus flavoured with lemon juice and plenty of garlic.
- 2 cups chickpeas, rinsed and drained
- 5 tbsp fresh lemon juice
- 1⁄4 cup olive oil, or more to taste
- 11⁄2 tbsp tahini (sesame seed paste)
- 4 cloves garlic, crushed
- 1 pinch coarse salt
Combine chickpeas, lemon juice, olive oil, tahini, garlic, and salt in a food processor and pulse several times to mix.
Process until hummus is smooth, about 1 minute.
Serve with fresh ciabatta and tomato and cucumber salsa.
