Ingredients
- 2 cup(s) cake flour
- 2 cup(s) cornflour
- 2 teaspoon(s) salt
- 1 cup(s) butter, softened
- 1 cup(s) icing sugar
- 1 teaspoon(s) vanilla extract
- 1 tablespoon(s) lemon zest
- ICING
- 1 cup(s) icing sugar
- 1 tablespoon(s) fresh lemon juice food colouring, colour of your choice
Method
Step 1
In a small bowl, sift together flour, cornstarch and salt and set aside.
Step 2
In a large mixing bowl, beat butter and powdered sugar until light and fluffy. Mix in vanilla and lemon zest. Gradually mix in the dry ingredients until well blended.
Step 3
Shape the dough in to a flat disk. Wrap in plastic wrap and refrigerate for one hour.
Step 4
Preheat oven to 180oC.
Step 5
On a lightly floured surface, roll out the dough to 1/4 inch thick. Cut the dough in to desired shapes. Place the cookies 1 inch apart on ungreased baking trays or baking trays lined with parchment paper.
Step 6
Bake until lightly browned on the bottom about 8 minutes. Don’t over bake. Cool for 5 minutes on the baking tray and then remove to a wire rack to cool.
Step 7
Icing: Whisk together icing sugar, lemon juice and food colouring if create mixture. Add a dash more lemon juice if a thinner glaze is needed.
