These tender lemon garlic prawn skewers make a delicious party time starter or an easy outdoor family dinner.
- 680g prawns, peeled and deveined
- coarse salt and freshly ground black pepper, to taste
- 60g butter, melted
- 60ml lemon juice, freshly squeezed
- 4 cloves garlic, finely chopped
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
Preheat oven to 220°C. Lightly oil a baking tray or coat with non-stick spray.
Thread the prawns halves onto skewers. Place skewers onto the prepared baking sheet. Place into oven and roast just until pink, firm and cooked through, about 5-7 minutes.
Melt butter in a medium skillet over medium high heat. Stir in lemon juice, garlic, oregano, thyme and basil until fragrant, about 2 minutes; season with salt and pepper, to taste.
Serve prawn skewers immediately, brushed with butter mixture.
