Lemon rice is zesty, fresh and fragrant. It is a must with our roast lamb, but also goes well with other meats and curries too.
Ingredients
- 500g basmati rice
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1⁄4 teaspoon turmeric
- Rind and juice of 2 lemons
- Toasted cashew nuts (optional)
Method
Step 1
Cook the rice for ten minutes in boiling water and drain. Gently fry the mustard seeds and lemon zest in the oil. Add the spice mixture to the drained rice, and stir in the lemon juice. Serve warm. Garnish with toasted cashew nuts, if required.
