Ingredients
- 400g butternut, cubed
- 1 carrot, peeled and cubed
- 1 cup Probrands Whole Brown Lentils
- 1⁄2 onion, diced
- 2 cups vegetable stock
- 1 tbsp tomato paste
- juice of 1 lime
- 1⁄2 tbsp cumin
- 1⁄2 tbsp ground ginger
- 1⁄2 tsp nutmeg
- salt and freshly ground pepper to taste
- fresh coriander
Method
Step 1
In a large oven proof dish combine butternut, carrot, Probrands Whole Brown Lentils, onion, broth, tomato paste, lime juice, cumin, ginger, nutmeg, salt, and pepper. Cook on low for 2-3 hours until everything is tender. Season and serve with fresh coriander.
