Lime & Avocado Ice Cream

A delicious ice cream with a twist.

Ingredients

  • 4 ripe avocados
  • 2 limes, juiced
  • 200g caster sugar
  • 300ml cream
  • ½ tsp vanilla essence

Method

Step 1

Place the avocado and lime juice in a blender and whizz up until it’s a smooth purée.

Step 2

Put the avocado-lime mix in a food processor with a whisk attachment (or use a handheld whisk) and add the cream, caster sugar, and vanilla essence. Whisk on a medium-high setting for about 3 minutes. Place in a freezable container for 3-4 hrs.
