Ingredients
- 6 tbsps freshly squeezed lemon juice
- 2 cloves garlic, finely chopped
- 2 tsps salt plus more to taste
- 200ml olive oil
- 2 tsps fresh oregano, finely chopped
- freshly ground black pepper
- 400g mixed lettuce leaves
- 400g chickpeas, drained and rinsed
- 225g feta cheese, crumbled
- 1 cucumber, sliced
- 340g cherry tomatoes, halved
- 1 yellow pepper, diced
- 1 red pepper, diced
- 1 red onion, sliced
- 1 avocado, sliced
- 5 radishes, sliced
- sesame seeds, toasted
- fresh coriander
Method
Step 1
In a small bowl, whisk together the lemon juice, garlic, salt, and oil. Stir in the oregano and pepper to taste. Set aside.
Step 2
In a large bowl lightly toss the lettuce with some of the dressing. Divide the lettuce among 4 salad bowls. Scatter the rest of the salad ingredients over the top of the lettuce.
Step 3
Drizzle over the remaining dressing and sprinkle over some sesame seeds and fresh coriander.
