Ingredients
- 1 kg mutton on the bone / beef skin /chicken pieces
- 1 tsp ground cumin
- 1 tbsp ground coriander
- 1/2 tsp elichee powder (ground cardamon seeds)
- 1 tsp ground fenugreek
- 1 tsp chilli powder (use rough ground chilli for extra heat)
- 1 tsp mustard powder
- 1tsp tumeric
- 2 tbsp of ghee (or olive oil)
- 4 onions sliced
- 4 tsps crushed ginger
- 4 tsps crushed garlic
- 1 cinnamon stick
- 2 tins peeled tomatoes
- 1/2 cup brown vinegar
- 1 cup beef / mutton stock
- 2 tsps sugar
- salt & pepper
Method
Step 1
Cut meat into 3 cm cubes unless you are using chicken, then leave the pieces whole.
Step 2
Fry meat until brown in ghee or oil. Cook in small batches. Remove from pan. Fry onions till soft with garlic, ginger and cinnamon.
Step 3
Blend spices in bowl then add to onions. Stir well and cook for two minutes on low heat. Add meat, stir. Add vinegar, stock, tomatoes, sugar, salt and pepper.
Step 4
Cook, covered, over very low heat for about two hours. Discard cinnamon sticks.
