Preheat the oven to 180 °C.
Scatter the onions, olives, lemon and bay leaves in the roasting pan.
Stir in the tomato paste and balsamic vinegar into the chicken stock, and then pour over the onions.
Lay the Chicken Drumsticks on top, drizzle with the olive oil and sprinkle with salt and pepper.
Roast for 35 minutes or until the chicken is golden.
Serve with a selection of seasonal vegetables and rice.
