Mexican Rice

This is a wonderful side dish for any Mexican meal.
Ingredients
- 90ml vegetable oil
- 370g long-grain rice
- 10g garlic salt
- 1⁄2 tsp ground cumin
- 80g chopped onion
- 235ml tomato sauce
- 950ml chicken stock
Method
Step 1
Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin. Stir in onions and cook until tender. Stir in tomato sauce and chicken stock; bring to the boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff up with a fork.
