- 1 teaspoon(s) Olive Oil
- 1 Clove Garlic, minced
- 1/4 Red Onion, minced
- 400 grams Can of Magic Time Garbanzo Beans drained and rinsed
- 1 tablespoon(s) Magic Time Taco Seasoning
- 1 Guacamole ( Avo Salsa)
- 6 Old El Paso Taco Shells
- 4 Ripe Avocandos, diced
- 1 Tomato, diced
- 1/2 Onion, finely diced
- Lime to make Juice
- 1/2 teaspoon(s) Salt plus more to taste
- 1 Chopped Coriander
- 1/4 lime wedges
To make the salsa, add the tomato, avocado and onion to a bowl.
Juice 1 lime over the bowl, sprinkle with ½ tsp salt and stir to combine. Taste test, then add up to 1 more lime and another ½ tsp of salt to suit your taste.
In a large pan, heat olive oil over medium heat. Once simmering, add the garlic and onion and saute until onion is soft, 3-4 minutes.
Pour in beans and taco seasoning, and stir to combine. Sauté, stirring occasionally, until chickpeas are heated through and some of the water is evaporated, 2-3 minutes.
Serve alongside taco shells, guacamole, coriander and lime wedges.
