Mini Banoffee Pies

  • 8 digestive or tennis biscuits
  • 2 bananas, sliced
  • 1 lemon, juiced
  • 397g tin of condensed milk turned into caramel (boil for 11⁄2 hours)
  • 300ml cream
  • grated chocolate, to garnish


Step 1

Break a biscuit into the bottom of each glass.

Step 2

Dip each slice of banana into the lemon juice. Add a layer of bananas to each glass, on top of the biscuits.

Step 3

Open the tin of caramel and give it a good stir - right down to the bottom. Drizzle some on top of the bananas.

Step 4

Gently whip the cream. Spoon a little cream onto the top of the caramel in each glass.

Step 5

Sprinkle each glass with grated chocolate and serve.
