Ingredients
- 500g sugar
- 440g plain flour
- 190g cocoa powder
- 11⁄2 teaspoons of baking powder
- 11⁄2 teaspoons of bicarbonate of soda
- 1 teaspoon of salt
- 2 eggs
- 250ml milk
- 125ml Cooking Oil
- 2 teaspoons vanilla essence
- 250ml hot coffee
- BUTTERCREAM and CHOCOLATE EYES
- 250g butter, softened
- 800g icing sugar
- 1 tablespoon milk, if needed
- Red food colouring
- 1 bar white chocolate
- 1 bar milk chocolate
Method
Step 1
Preheat oven to 180°C.
Step 2
Line two muffin trays with cupcake liners. Combine dry ingredients in a bowl and stir slowly to combine. Add the eggs, milk, Cooking Oil and vanilla essence and mix well, scraping down sides of the bowl as needed. Turn the mixer to the lowest speed and slowly add the hot coffee, be careful of splashing.
Step 3
Fill the cups just slightly more than half way with the batter. Bake at 180°C for 15-20 minutes.
Step 4
Remove from the oven and let them cool before icing them.
Step 5
For the buttercream, beat the butter for 2 minutes. Slowly add the icing sugar until you reach your desired consistency. Colour the icing by adding a bit of red food colouring to make it pink. Pipe buttercream onto cooled cupcakes.
Step 6
To make the eyes, melt the white chocolate and drop a small blob of white chocolate onto a piece of baking paper. Melt the milk chocolate and drop a smaller blob of milk chocolate onto the white chocolate to make the eyes. Use the rest of the melted milk chocolate to make the nose and mouth.
