Ingredients
- 3 cups mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 tbsp olive oil
- 1⁄2 tsp sea salt
- 2 cups water
- 2 tsps soy sauce
- 1 tsp onion powder
- A pinch of red chilli flakes
- freshly ground pepper
- 1 cup cream
- Chives, finely chopped for garnish
Method
Step 1
Sauté the onions and garlic in the olive oil until the onions turn translucent. Add the mushrooms and salt. Sauté for 15 minutes.
Step 2
Add the rest of the ingredients and let the soup simmer for 10-15 minutes. Take it off the heat.
Step 3
Remove and set aside some of the cooked mushrooms to use as a garnish. Add everything in the blender and blend on full speed until smooth and creamy. Garnish with chives and mushrooms.
