Ingredients
- 3 tbsps olive oil
- 2 onions, sliced
- 200g mushrooms, sliced
- 1 tsp salt
- 5 to 7 sprigs fresh thyme
- 2-3 tsps balsamic vinegar
- 1 sheet puff pastry
- Parmesan, finely grated
Method
Step 1
Heat the olive oil in a large pan over medium heat. Add the onions and stir continuously until softened, about 8 to 10 minutes. Sprinkle in the salt, add the mushrooms. Finely chop half of the thyme and add to the pan with the balsamic vinegar and reduce the heat to medium low. Cook, stirring occasionally, until caramelised and golden, about 20 - 25 minutes or so. Remove from the heat and set aside.
Step 2
Preheat the oven to 180°C. Unfold the sheet of puff pastry on a parchment-lined baking tray. Fold all the edges over to create a border around your tart. Top the centre of the rolled out puff pastry evenly with the onion and mushroom mixture.
Step 3
Bake the tart for about 25 to 35 minutes, until the pastry is golden brown and flaky. When there is about 2-3 minutes left, sprinkle on the Parmesan and continue baking for the remaining time. Remove from the oven and let it cool for about 10 minutes before slicing and serving. Garnish with left over thyme sprigs.
