A simple pizza full of delicious earthy flavours.
- 1 pizza base
- 3 tbsps pizza sauce
- 1 tbsps olive oil
- 200g shiitake mushrooms
- 150g button mushrooms
- 1 clove garlic, finely chopped
- 3 sprigs of fresh thyme, leaves stripped off the stems
- 100g cherry tomatoes, halved
- 100g mozzarella cheese, grated
- 100g ricotta cheese
In a large pan, sauté the mushrooms, garlic, and thyme in a little olive oil until softened and cooked through, about 5 minutes. Place mushrooms in a small bowl, leaving the liquid in the pan, and set aside.
Preheat oven to 230°C. Brush the olive oil on the dough then spread an even layer of pizza sauce over the pizza. Sprinkle half of the mozzarella cheese on top and dollops of ricotta cheese. Add the mushrooms on top and cherry tomatoes. Sprinkle remaining mozzarella.
Place in the oven and bake for 12-15 minutes or until the crust is golden brown. Top with fresh basil leaves and serve.
