Ingredients
- 3 bars (100g each) Cocoa Dark Chocolate, chopped
- 1/3 cup butter
- 3 eggs
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1⁄2 tsp salt
- 1 cup flour
- 1 cup chopped almonds or macadamias (optional)
- 1⁄2 cup dried cranberries
Method
Step 1
Preheat oven at 180°C.
Step 2
Grease an 8 x 8-inch (20 x 20 cm) square baking pan and line with greaseproof paper.
Step 3
Melt the chopped Dark Chocolate and butter in a double boiler. Stir constantly.
Step 4
Remove from the heat and let cool slightly.
Step 5
Beat together the eggs, sugar, vanilla, and salt until well combined.
Step 6
Add the melted Lindt Chocolate and butter mixture, and beat gently by hand or on a low setting on a mixer until evenly incorporated.
Step 7
Add the flour, nuts and cranberries. Mix until just combined.
Step 8
Pour the mixture into the prepared pan and bake approximately 20 minutes.
