Ingredients
- 120g plain flour, sifted
- 30g semolina
- 2 tbsps sugar
- 1⁄4 tsp salt
- 110g butter, cold, grated
- 3 tbsps milk, cold
- Filling:
- 50g sugar
- 1 tbsp plain flour
- 1⁄2 vanilla bean
- 680g plums, pitted and sliced
- 1 egg, lightly beaten
- 1 tbsp sugar
- 1 tsp butter, cold
- Vanilla or honey yogurt, for serving
Method
Step 1
To make the crust, place all ingredients except milk in mixing bowl. Combine with fingertips until mixture resembles coarse meal. Mix in the milk with a fork. Bring together to form a ball but do not overwork. Form dough into 2 1/2cm thick circle. Wrap with plastic wrap. Chill 1 hour.
Step 2
To make the filling, combine the sugar and flour in a mixing bowl. Split the vanilla bean in half and scrape the seeds into the bowl and stir. Toss the plums in the sugar mixture until evenly coated.
Step 3
Preheat oven to 200°C. On floured work surface, roll dough to a 33cm diameter circle. Place on a parchment-lined baking tray. Arrange the plum slices on the dough leaving 5cm border. Fold the excess dough over the plums. Brush the pastry with the egg. Sprinkle with sugar. Slice the butter thinly and place on top of plums.
Step 4
Bake on the bottom shelf until crust is golden and fruit is bubbling, about 35 minutes. Serve warm or at room temperature.
