Ingredients
- 4 eggs
- 1 cup caster sugar
- 1 teaspoon vanilla essence
- 1 cup Self Raising Flour
- 150g butter, melted
- 1 cup ground almonds
- STICKY ORANGE TOPPING
- 1 cup caster sugar
- 1⁄2 cup water
- 1 vanilla bean, split and seeds scraped
- 2 oranges, very thinly sliced
Method
Step 1
Pre-heat the oven to 160°C.
Step 2
To make the topping, place the caster sugar, water and vanilla in a 21⁄2 litre capacity 20cm non-stick ovenproof frying pan over medium heat.
Step 3
Stir until the sugar is dissolved. Add the orange slices and simmer for 10-15 minutes or until the orange slices are soft. Remove from the heat and set aside the topping.
Step 4
To make the cake, place the eggs, caster sugar and vanilla essence in the bowl of an electric mixer and whisk for 8-10 minutes or until the mixture is thick, pale and tripled in volume.
Step 5
Sift the Self Raising Flour over the egg mixture and fold through with the butter and ground almonds.
Step 6
Pour the cake mixture over the cooked oranges in the ovenproof frying pan and bake for 40-45 minutes or until cooked when tested with a skewer. Turn out onto a platter to serve.
