Delicious, healthy, and easy to prepare.
- 50g fresh breadcrumbs
- 50g Parmesan cheese, grated
- zest of 1 lemon
- 2 tbsps flat-leaf parsley, chopped
- 1 tbsp olive oil
- 4 x white fish fillets
Heat oven to 220°C. Mix the breadcrumbs with the Parmesan, lemon zest and parsley, then season well.
Top the fish evenly with the breadcrumb mixture, then drizzle with the olive oil.
Put in a roasting dish, then bake in the oven for 15-20 minutes until cooked through and flaky.
