Great to serve for company or a crowd. This recipe also makes an unusual brunch offering.
- 500g good quality spaghetti
- 1 tbsp extra virgin olive oil
- 250g bacon, cut into 1cm pieces
- 2 garlic cloves, crushed
- 2 tbsp parsley, finely chopped
- ½ cup cream
- 2 eggs
- 1 egg yolk
- ½ cup finely grated Parmesan Cheese
Cook spaghetti in a large saucepan of boiling salted water until al dente. Drain.
Meanwhile, heat olive oil in a frying pan over high heat. Cook bacon for 4-5 mins or until golden and crisp. Add garlic and cook, stirring for 1 min. Add parsley and remove from heat.
Whisk cream, eggs and yolk together in a jug. Add half of the parmesan and season with pepper. Return pasta to pan with cream mixture and mix to combine.
Divide the spaghetti mixture among bowls. Top with remaining Parmesan. Season with freshly ground black pepper and serve with a crisp green salad.
