Pasta with Chicken and Mushroom2015-07-30

- 300g dried pasta
- 25g butter
- 1 tbsp olive oil
- 1 garlic clove, chopped
- 50ml white wine
- 200ml double cream
- 250g mushrooms, chopped
- 100g breast chicken, cubed
- sea salt and black pepper, to taste
Bring a pot of water to the boil, add salt and pasta and cook until tender. Drain your pasta.
Melt the butter and oil in a large pan and add the garlic, mushrooms, chicken and season with the salt and pepper. Cook for about 8-10 minutes until coloured.
Add a good splash of wine and simmer until evaporated, add the cream, simmer gently until it has thickened.
Serve pasta topped with the sauce and garnish with flat leaf parsley.
