Pea Guacamole with Chilli and Tortilla Chips2014-09-22

A popular dish and incredibly quick to put together.
- 500 grams Frozen Peas
- 1 Chilli, de-seeded
- 1 Lime to juice
- 1/4 teaspoon(s) Salt and Pepper
- 100 grams Creme fraiche or Sour Cream
- 1 Large Pack of Tortilla Chips
Place the peas in a large bowl and cover with boiling water. Leave to stand for a minute or so for peas to defrost, then drain.
Blitz the peas with the chilli, lime juice and salt and pepper. Taste to season. Spoon the mixture onto tortilla chips and top with crème fraiche. Garnish with extra chilli for anyone who can take the heat!
