- 1 baguette, sliced
- 1/2 garlic clove
- 150g peas
- coarse salt
- 2 tbsps olive oil
- Parmesan shavings, to garnish
- fresh mint, to garnish
- few drops of balsamic vinegar
Grill the baguette slices and rub with the garlic clove.
Blanch the peas in a large saucepan of boiling salted water until just tender, about 2 minutes. Drain and transfer to a bowl. Season with salt and olive oil and mash with the back of a fork.
Spread about 1 tablespoon of the mixture over each toast. Garnish with shaved Parmesan and fresh mint.
