Peach Cobbler

Ingredients
- about 1.35kg peaches, peeled and sliced
- 3 tbsp caster sugar
- 2 tbsp peach brandy
- 1 tbsp fresh lemon juice
- 1 tbsp cornflour
- FOR THE TOPPING
- 115g plain flour
- 1½ tsp baking powder
- ¼ salt
- 45g finely ground almonds
- 55g caster sugar
- 55g butter or margarine
- 85ml milk
- ¼ tsp almond essence
Method
Step 1
Preheat a 220°C oven.
Step 2
In a bowl, toss the peaches with the sugar, peach brandy, lemon juice and cornflour.
Step 3
Spoon the peach mixture into a 3½ pt (2 litre) baking dish.
Step 4
For the topping, sift the flour, baking powder and salt into a mixing bowl. Stir in the ground almonds and all put 1 tablespoon of the sugar. With 2 knives, or a pastry blender, cut in the butter or margarine until the mixture resembles coarse breadcrumbs.
Step 5
Add the milk and almond essence and stir until the topping mixture is just combined.
Step 6
Drop the topping in spoonfuls onto the peaches. Sprinkle with the remaining tablespoon of the sugar.
Step 7
Bake until the cobbler topping is browned, 30 - 35 minutes. Serve hot, with ice cream, if wished.
