Pear, Parma, Blue Cheese and Rocket Rolls2015-01-21

These delightful starters are the perfect introduction to a festive Christmas meal. Full of flavour, yet light enough for everyone to enjoy before the main meal ahead.
- 250ml cold water
- 65ml lemon juice
- 2 pears, cored and cut into slim wedges
- 12 slices of Parma ham (prosciutto)
- 12 thin slices of blue cheese
- 24 or more whole rocket leaves
- olive oil to drizzle
- freshly-milled black pepper
Mix together the cold water and lemon juice and pour over the pear slices. Allow to steep a few minutes to prevent discoloration. Drain and pat dry thoroughly.
Just before serving, lay a slice of Parma ham on a board then lay a slice of pear, blue cheese, and rocket on one end and roll up, making sure some of the filling ingredients protrude above the ham roll.
Serve on platters, drizzle with olive oil and black pepper then serve.
