Poached Egg & Avocado Toast

  • 2 eggs
  • 1 ripe avocado, sliced
  • 2 tsps of lemon juice
  • 2 slices wholemeal bread or rye, toasted
  • pinch of pepper and salt
  • 2 tbsp white wine vinegar
  • 1⁄2 cup rocket
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds


Step 1

Butter the toasted bread or rye. Layer the rocket over the toast, followed by the avocado slices. Drizzle the lemon juice over the avocado.

Step 2

To poach the eggs, ll a deep pan halfway with water. Bring it to simmer and add vinegar. Crack both eggs into individual cups. Stir a whirlpool e ect into the pan. Slowly tip each egg into the water, white first. Cook for three minutes then remove with a slotted spoon. Drain onto kitchen paper.

Step 3

Top the avocado with the poached eggs. Sprinkle with seeds, salt and pepper.
