Potato & Mushroom Salad

This recipe has extra flavour and is unlike an ordinary potato salad.


  • 2 tbsps olive oil, more as needed
  • 900g new baby potatoes
  • 450g button or shiitake mushrooms
  • salt and pepper to taste
  • 3 tbsps sherry vinegar
  • 2 tbsps tarragon
  • 2 garlic cloves, finely chopped
  • 100g rocket
  • 1 red onion, peeled and sliced


Step 1

Preheat the oven to 200°C. In a large bowl, toss the potatoes with the olive oil, salt, pepper, vinegar tarragon and garlic. Add to a greased baking dish and roast for 30 minutes.

Step 2

Turn the oven up to 220°C and add the mushrooms to the baking dish and roast for another 20-minutes, tossing a few times.

Step 3

Remove the dish from the oven and allow to cool slightly. Sprinkle over the rocket and red onion.
