Prawn & Avocado Salad

  • 300g prawns
  • 1 lemon, juiced
  • 150g cherry tomatoes, sliced
  • 2 avocados, sliced
  • fresh coriander for garnish


Step 1

In a large frying pan, on a medium heat, melt some butter then add 300g prawns and the juice from 1 lemon. Whilst the prawns are cooking slice 150g cherry tomatoes and slice 2 avocados.

Step 2

Once prawns are cooked, take off the heat and drain. Arrange the cherry tomatoes, prawns and avocado on plates and drizzle some more lemon juice over the salad on each plate. Garnish with fresh coriander.
