Prawn & Cashew Curry

Ingredients
- 5cm piece of fresh ginger, finely grated
- 2 cloves of garlic, finely chopped
- 1 red onion, finely chopped
- 1 red chilli, chopped
- 1 tsp coconut oil or olive oil
- 1⁄2 tsp cinnamon
- 3 tsps cumin seeds
- 1⁄2 tsp cardamom
- 1⁄4 tsp ground cloves
- pinch of turmeric
- 200g can chopped tomatoes
- 200g king prawns
- 50g cashews, ground
- fresh coriander or spring onion, roughly chopped
- pinch of sea salt
- freshly ground black pepper
Method
Step 1
Fry the onion, garlic, ginger, chilli and spices in the coconut or olive oil until soft. Then add the chopped tomatoes and 200ml of water.
Step 2
Simmer for 20 minutes until the sauce starts to thicken. Add the prawns and simmer for a further 5 minutes. Added the cashews and bring to the boil then take of the heat and stir in the coriander.
Step 3
Season with salt of pepper and serve with rice and chopped chillies.
