Pulled Pork Sandwich

Ingredients
- 1kg pork shoulder
- 4 tbsps oil
- 4 tbsps mustard
- 1 tsp chilli powder
- 1 tbsp Worcestershire sauce
- 1 red onion, chopped
- 1⁄4 cabbage, shredded
- 2 carrots, grated
- 2 tbsps mayonnaise
- 1 lemon, juiced
- 4 bread rolls
- 4 tbsps barbecue sauce
Method
Step 1
Heat the oven to 170oC. Score the skin on the pork. Mix together the oil, mustard, chilli powder and Worcestershire sauce, season with salt and pepper and rub the mixture into the pork.
Step 2
Place in a roasting tin, cover with foil and roast in the oven for 3 hours or until the pork is meltingly tender. Let the meat cool a little then pull the flesh into shreds using two forks.
Step 3
Mix together the onion, cabbage, carrot, mayonnaise and lemon juice. Spread the bread rolls with butter and make sandwiches with the pulled pork and the vegetables. Drizzle with the barbecue sauce.
