Pulled Pork Sandwich

An American BBQ dish – well worth trying.
Ingredients
- 1 medium onion, chopped
- 1/2 cup tomato sauce
- 1/3 cup cider vinegar
- 1/4 cup packed brown sugar
- 1/4 cup tomato paste
- 2 tbsp sweet paprika
- 2 tbsp Worcestershire sauce
- 2 tbsp mild mustard
- 1 1/2 tsp salt
- 1 1/4 tsp black pepper
- 1.8kg boneless pork shoulder, cut into 4 pieces
- 12 soft hamburger buns or ciabatta rolls, warmed
- Gherkins
- Crisps Chilli sauce (optional)
Method
Step 1
Cook in either a slow –cooker or a very large pot. The slow cooker is best as the pork becomes more flavourful and tender.
Step 2
Add the following ingredients and mix well; the onion, tomato sauce, vinegar, brown sugar, tomato paste, paprika, Worcestershire sauce, mustard, salt and pepper.
Step 3
Add the pork and coat well with the sauce and then cover. Cook on a very low setting until the pork is very tender (8-10 hours in the slow cooker on the low setting).
Step 4
Transfer the pork to a large bowl, and then increase the heat to high in the pot/ slow cooker so that it boils in order to thicken and reduce the sauce.
Step 5
While the sauce is reducing, with 2 forks, pull the pork into shreds. Return the shredded pork to the pot/slow cooker and toss with the sauce to combine.
Step 6
Split the rolls that you intend to use, add a heaped pile of the pulled pork and top with sliced gherkins. Serve with extra gherkins, chips and coleslaw.
