An irresistible frozen treat for a hot summer day.
Ingredients
- 1 cup raspberries
- 3 tbsps lemon juice
- 1¾ cups icing sugar
- ½ cup greek style yoghurt
- 1 tsp vanilla essence
- 1 cup cream
Method
Step 1
Process the raspberries in a blender or a food processor. .Place the blended raspberry pulp into a mixing bowl, and stir in the lemon juice, icing sugar, greek yoghurt and vanilla essence until the sugar is dissolved.
Step 2
Whip the cream to soft peaks and then fold through the raspberry mix, and then scrape into a freezer-safe container, covered with parchment paper. Freeze for at least 4 hours, then scoop and serve!
