Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 cup tomatoes, diced
- 1 cup Probrands Red Split Lentils, rinsed
- 4 cups chicken stock
- salt and ground pepper to taste
- 1⁄2 bunch flat leaf parsley, chopped
- fresh cream, to serve
Method
Step 1
Heat a medium pot over medium heat and add the oil. Add the chopped onion and cook until golden brown and soft. Add the garlic, cumin, coriander, tomatoes and Probrands Red Split Lentils to the onions. Continue to cook for 5 minutes.
Step 2
Add in chicken stock and increase the heat to medium-high. Once the soup comes to a boil, reduce the heat to low and let it simmer for 20-30 minutes, or until the lentils are tender. Season with salt and pepper to taste. Transfer the soup to the blender and purée until smooth. Ladle the soup into 2 large soup bowls, and garnish with fresh cream and parsley.
