Red Onion Marmalade

Make this marmalade: Great with cheese, tarts and sandwiches

Ingredients

  • 8 red onions, sliced
  • 1 cup dry red wine
  • 3/4 cup red wine vinegar
  • 1/4 cup balsamic vinegar
  • 1/4 cup light brown sugar
  • 1/4 cup honey
  • 1 tbsp orange juice
  • 1 tbsp lemon juice

Method

Step 1

Cook the onions, wine, vinegar, brown sugar and honey over medium heat stirring constantly, until sugar is dissolved; then simmer until the consistency of marmalade, about 30 minutes.

Step 2

Stir in the juices, continue to cook, stirring, until the juices are absorbed. Let cool, then cover and refrigerate for up to 3 weeks.

Step 3

Serve at room temperature with steaks or chicken.
