Rice Pudding with Soft Fruit Sauce

Ingredients
- 350g short-grain rice
- 335ml milk
- ⅛ tsp salt
- 100g light brown sugar
- 1 tsp vanilla essence
- 2 eggs, beaten
- grated rind of lemon
- 1 tsp lemon juice
- 30g butter or margarine
- FOR THE SAUCE
- 140g strawberries, hulled and quartered
- 115g raspberries
- 115g caster sugar
- grated rind of 1 lemon
Method
Step 1
Preheat a 170°C oven. Grease a deep 2 litre baking dish.
Step 2
Bring a saucepan of water to the boil. Add the rice and boil 5 minutes. Drain. Transfer the rice to the prepared baking dish.
Step 3
In a bowl, combine the milk,salt,brown sugar, vanilla,eggs and lemon rind and juice. Pour this mixture over the rice and stir well.
Step 4
Dot the surface of the rice mixture with the butter or margarine. Bake until the rice is cooked and creamy, about 50 minutes.
Step 5
Meanwhile, for the sauce, combine the fruit and sugar in a small saucepan. Stir over low heat until the sugar dissolves completely and the fruit is becoming pulpy. Transfer to a bowl and stir in the lemon rind. Refrigerate until required.
Step 6
Remove the rice pudding from the oven. Let cool completely, and serve with the berry sauce.
