Ingredients
- 85g plain flour
- 2 tsp baking powder
- ⅛ tsp salt
- 55g butter or margarine, at room temperature
- 30g plain chocolate
- 115g caster sugar
- 85ml milk
- ¼ tsp vanilla essence
- whipped cream, for serving
- FOR THE TOPPING
- 2 tbsp instant coffee
- 315ml hot water
- 100g dark brown sugar
- 70g caster sugar
- 2 tbsp unsweetened cocoa powder
Method
Step 1
Preheat a 180°C oven. Grease a 9 in (23cm) square non-stick baking tin.
Step 2
Sift the flour, baking powder and salt into a small bowl. Set aside.
Step 3
In a heatproof bowl set over a pan of simmering water, or in a double boiler, melt the butter or margarine, chocolate and caster sugar, stirring occasionally. Remove the bowl from the heat.
Step 4
Add the flour mixture and stir well. Stir in the milk and vanilla.
Step 5
Pour the mixture in the prepared baking tin.
Step 6
For the topping, dissolve the coffee in the water. Let cool.
Step 7
Mix together the sugars and cocoa powder and sprinkle over the pudding mixture.
Step 8
Pour the coffee evenly over the surface. Bake 40 minutes. Serve immediately with whipped cream.
