Ingredients
- 680g baby new potatoes
- 3 tbsps olive oil
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 2 tbsps garlic, finely chopped
- 2 tbsps chives, finely chopped
- 1 tbsp dill, finely chopped
Method
Step 1
Preheat the oven to 200°C. Cut the potatoes in half and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated.
Step 2
Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
Step 3
Remove the potatoes from the oven, toss with chives and dill, season to taste, and serve hot with sour cream and dill sauce.
