Roast beef makes an impressive main for a winter feast, and it’s also an easy option for a relaxed weekend meal.
Ingredients
- 4 garlic cloves
- 2 tbsps thyme
- 1 tbsp black peppercorns
- 1 tbsp wholegrain mustard
- 4 anchovies
- 2 tbsps olive oil
- 2.7kg rib of beef
Method
Step 1
Heat oven to 220°C. Using a large pestle and mortar, grind the garlic, thyme, peppercorns, mustard, anchovies and olive oil to a paste.
Step 2
Rub the mixture all over the beef and put in a large roasting tin.
Step 3
Roast for 25 minutes, then turn down the oven to 160°C and roast for another 90 minutes for rare; 2 hours for medium rare.
