Ingredients
- 500g butternut, peeled and diced
- 200g beetroot, diced
- 100g assorted rocket
- 1 tbsp sesame seeds
- FOR THE DRESSING:
- 1⁄2 cup red wine vinegar 
- 1 cup olive oil
- few drops balsamic vinegar
Method
Step 1
Roast the butternut and beetroot separately in the oven at 180°C for about 20 minutes in a little olive oil until soft and slightly browned. Remove, and leave to cool.
Step 2
Make the dressing by mixing together the three ingredients.
Step 3
Assemble the rocket, beetroot and butternut into a bowl and sprinkle over the sesame seeds. Pour the dressing over and serve.
