Roast Chicken with Butternut2016-05-26

- 1 full chicken
- 3 tbsps olive oil
- 3⁄4 tsp salt
- 1⁄4 tsp freshly ground pepper
- 1⁄2 tsp dried rosemary
- 1⁄2 tsp dried thyme
- 1 butternut, peeled and sliced
- 1 whole garlic, divided
- 3 tbsps water
- fresh rosemary and thyme for garnish
Heat the oven to 200°C. Coat the chicken with 1 tablespoon of the oil, 1⁄2 teaspoon of the salt and 1⁄8 teaspoon of the pepper. Place the chicken in a large roasting pan.
Toss the butternut with the remaining oil, salt, and 1⁄8 teaspoon of pepper, garlic and dried herbs. Add the butternut to the roasting pan.
Roast in the oven for 11⁄2 hours until the butternut is tender and the chicken is cooked through and the juices run clear. Remove from the oven and serve garnished with fresh rosemary and thyme.
