Roast Drumsticks with Vegetables

Ingredients
- 2 tbsps olive oil
- 2 tsps salt
- 11⁄4 tsps freshly ground black pepper
- 560g baby potatoes
- 300g leeks
- 1 red onion
- 3 cloves garlic
- 12 chicken drumsticks
- 3⁄4 cup dry white wine
- 1⁄2 cup cream
- 1 tbsp flour
- 1 tbsp Dijon mustard
- 1 lemon, juiced
- 8 cherry tomatoes
Method
Step 1
Preheat the oven to 230°C. Toss 1 tablespoon oil, 1 teaspoon salt, and 3⁄4 teaspoon pepper with potatoes, leeks, onion and garlic in a large roasting pan. Rub chicken with remaining 1 tablespoon oil, 1 teaspoon salt, and 1⁄2 teaspoon pepper. Arrange on top of the vegetables in the pan. Pour the wine into the pan.
Step 2
Bake for 45 to 50 minutes or until chicken is done and golden. Remove chicken and keep warm. In a small bowl, stir together cream, flour, mustard and lemon juice until smooth; stir into drippings in the pan with the vegetables. Add the cherry tomatoes and bake 5 to 8 more minutes, stirring once, until thickened. Serve the chicken with the vegetables.
